the wild red currants are coming on.pretty much red and ripe. so small.i spent the morning picking them on our property. then i spent a longer time yet picking off all the little stems then i put water in the pan with the red currants and cooked them as soft as i could get them. then i added sugar and cooked a bit more. we have some pretty tasty syrup for tomorrow mornings pancakes. i also went for a walk and found out theres alot of wild chamomile out here.gonna dig some up and plant in our woods. been seeing oyster plants all over too. lots of good stuff to eat and use.

Mmmm... wild red currant syrup on pancakes... mmmm..... better than donuts....

it sure was good stuff.Gary O said it taste like strawberry syrup. all the kids around here have been wild red currant picking enough to make a pie this morning.. they are gonna bring us a piece later.cant wait to try that out...

DH's Mom made wild red currant jam. Red currants have natural pectin so you don't need to add the commerical stuff to get it to jell.

picked a good size container yesterday and made wild red currant muffins.not very pretty. but passable. i think i am either just gonna dry them or make canned syrup.

the wild red currants are really on now. gonna pick a jar full each day and make syrup and can it for cooler days ahead. the syrup is very good.gary o says like strawberry....

I've never seen a red currant before, but there are lots of black currants here. They seem to become sweeter after the first frost. Great idea about the syrup and the pie. John

yum Timber Tramp.sounds good.the wild red currant is a bit on the bland side until sugar is added. i will say the syrup color is very pretty.yesterday on the way back from town i saw tons of them unpicked and on the side of the highway. i want the mister to take me and go with me but between berry pickings,him building our place and chopping wood.its not gonna happen.all i can say is next berry season i am gonna be ready. just recently tasted the domesicated red currant.spectacular! is what i can say.
