Happily my wife brought me home Some elderberry growers from MO came up to meet with our local woodland farmers group. They produce a variety of juices, "shrubs", the drinkable kind, leathers, etc. We sampled some elderberry mead, the tannins in the elderberry balanced what is overly sweet in most meads I've tried, sort of like the hops balances beer.
What was really good was nocino, walnut liquer made by soaking young (june) green walnuts whole but quartered in neutral spirits. A very good unique flavor.

i want to made some mead.i have been saving big glass jugs to use. i collected alot of recipes to make mead and have been watching you tube on how to do this.

The walnuts are ready here, I'm going to start a little batch tomorrow. It's a nice local liquer to have on the shelf. Here's a recipe, they all seem to be similar; http://dramapothecary.com/blogs/recipes/7785147-how-to-make-homemade-nocino
I noticed our producers co-op is asking for golf ball sized green walnuts for the restaurants. They can also be pickled, I'm not sure if there are other uses.
The comments on the link are interesting. Apparently the liquer will remain green until it is aerated, it oxidizes and turns brown. Black walnut lumber is similar. I had worked with walnut over the years and by the time it got to me it was the dark brown walnut lumber we all know. The first time I put a walnut log on a sawmill and made lumber out of it I was shocked when the boards started coming off, they were green! Within a very short time the wood had turned brown.
