No have not but will keep a lookout. We just get the big Kirkland double packs of chunky pb. Probably sugar laden..

I do keep by my bedside a coffee cup full of roasted almonds. Could do worse for a bedtime snack.

Almonds are an excellent snack.

Today's dinner.... Boneless, skinless chicken thigh cooked in my Instant Pot. Butternut squash done in the air fryer and steamed carrots and broccoli.

Black Bean & Yam patty/burger, up first

Ingredients:
1 small to medium size sweet potato/yam (orange flesh type)
1 - 15 oz. can black beans, drained, rinsed
1/4 C. rolled oats
1/4 C. flour of choice
1 small onion, finely chopped (about 1/3 cup or to taste)
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp paprika
1 tsp cumin
1/2 tsp ground coriander
1/4 tsp salt

Directions:
Bake a sweet potato, 425 F for 40 minutes (I usually use the toaster oven )
Remove skin when safe to handle
Preheat the range oven to 400 F (toaster oven can work if big enough)
Mash half of the black beans in a bowl
Combine and mash the mashed beans with sweet potato
Process the rolled oats in a food processor or grinder. Lightly chop the oats. (I use a mini Cuisinart processor but a blade-type coffee grinder works too)
Combine the mashed mixture with the processed rolled oats, flour and all spices
Stir in the remaining black beans and mix
Place parchment paper on baking sheet
Split the patty batter into 6 portions
Shape into balls
Place balls on parchment paper on baking sheet or pan
Flatten each ball with palm of hand, to desired thickness
Bake @ 400 F for 20 to 25 minutes (Patties could also be fried in a pan, but baking in the oven reduces the fat level)
Note that the mixture will be sticky. Wetting your hands with water will help prevent the mixture sticking to the hands.

Mackerel and Bean patties/burgers

Ingredients:
Mackerel, 1 can, 15 oz (a can of salmon may be substituted)
Beans, 1 can, 15 oz (small beans like navy beans or black beans
Onion, finely diced, 1/3 cup, or to taste
1 egg
1/4 cup flour or ground oats (lightly processed in a small food processor)
2 tsp lemon zest
1 Tbsp lemon juice
1 to 2 tsp Old Bay seasoning... to taste...
1 to 2 tsp prepared Dijon mustard
1/4 tsp salt

Directions:
Drain the mackerel. Fork into flakes, mackerel, skin, bones and all
Drain the beans. No real need to rinse while beans but black beans should be drained and rinsed to avoid turning everything black)
Combine all ingredients in large bowl. Use spoons or hands to thoroughly mix. Wet hands work best to avoid sticking.
Shape the mixture into 1/4 to 1/3 cup size balls. Set on a plate.
Flatten balls into patties
Heat a fry pan on medium heat. Add olive or oil of choice and Cook until browned on both sides. OR, these may be baked/roasted on a parchment-covered pan or sheet in an oven... 400 degrees, about 20-25 minutes

I have also more or less combined the two recipes; 2 cans beans, 1 can fish and 1 medium size yam. Sort of wing it with the spices......

I have two Breville toaster ovens that I use a lot. They preheat quicker than the big range and also heat up the kitchen less. The two of them are different sizes and more suitable for different tasks.

The above two recipes also freeze well. Sometimes I freeze the mixture in a lump or two, then thaw, form and cook the patties later. Sometimes I make and cook the patties and freeze them individually and warm them in the microwave. Both ways work well. I like having premade and frozen items on hand. I like cooking but am spoiled by the kitchen equipment at home compared to the cabin's more basic utility kitchen. It is also hard to beat the home dishwasher.

Mackerel and salmon are both very heart-healthy omega-3 oily, fish. Lots of protein too. Beans have fiber. Yams have many vitamins and a good amount of potassium.
