I will be building a plywood kitchen (boxes and front panels) and I'm also considering a live edge wood top center island in the kitchen. In looking around for a food safe finish I discovered this product.

I work at the local Woodcraft store and most of the finishes we carry are food safe when cured. Just don't use as a cutting board or you get little pieces of finish in your food. Mineral oil is the go to finish for cutting boards.
Check out Rubio Monocoat. Vegetable based, one coat finish. Can be used on flooring so you know it's tough.
Osmo does not appear to be available on this side of the Atlantic.

I used Osmo on the interior of my logs and on tabletops and such. Not cheap but a very nice product. I got it on sale 6 years ago at a shop in S. Oregon that was phasing it out. It is still available in Canada, but I don't know about in the US. German product.
Definitely should have good ventilation when brushing it on/into wood but it sheds dust well and is food-safe when cured (full cure takes a couple weeks but dry to touch in a few hours to a day).
