I much prefer to either water bath or pressure can my food. Its easier than you might think.

When one looks the book up on Amazon USA there are more reviews and some negative. Apparently some folks are taking issue with some of the "preserve in oil" ideas. Google does find some articles that mention the real possibility of botulism when using oil to preserve things and not refrigerating. It is a question of acidity; commercial garlic in oil, for example, has something added to increase acidity and that prevents botulism formation. Something to think about .......
