Well after reading posts here for the past month or so and having wanted to finally get a cabin and land of my own; I lucked out and found one already built, with an outbuilding on 6 acres in Southern Ohio (Adams County for those who know the state. Amish built, fully furnished, ready to move-in, with only minor changes needed to make it a really usable place. Off the grid, with utilities available if I want to pay to have them hooked up, as well as wiring, plumbing, etc. Not going to happen! I just spent 3 days there, and my marine battery, Coleman Stove, and a couple of 9W CFL lights through an inverter worked just fine.
Heating is from a Jotul 602 CB woodburner, and it was obvious the previous owner didn't use it much. The first fire had me somewhat concerned since the wall behind it got pretty warm; enough that sap was leaking from several knots in the pine wall. So a quick trip to the hardware store and I found a UL rated heat shield on their clearance rack for $10, since one corner was bent a little. A few spacers and screws and the hot wall was solved. I also used the idea from here of using blocks to act as both a heat shield and heat sink and stacked up 6 behind the stove, with spacers under them to allow convection current. Works Great! Thanks for the idea.
That little stove is amazing in it's frugal use of wood, the cabin maintained 60-70 degrees even with outside temps in the low 20's at night, with. Burns clean and I was surprised at how little ash remained each day.
I converted the existing porta-pottie to a composting toilet; again thanks to suggestions here! Works great with no smell; I'm using a pet bedding wood chip covering, I got at Tractor Supply for $3.50 and the bag is huge. Should last for quite a while as it doesn't take much after each use.
Once the weather breaks, I'll be building a dedicated privy, a rain water collection system, outdoor kitchen and wood shed.
Mainly I wanted to thank all the posters here for all the great ideas and tips, they really help and give us newbie's lots of options and things to consider as we settle in to our cabins.

No not dreaming anymore! I've got the title laying right here in front of me and I still don't believe it's mine. A little more info, about 1.5 acres is meadow, the rest is wooded with two creeks running through it. I'll add some pics of the outside area I took with my cell phone, not to good but show some of the area around it. The cabin itself is 14X36 with the interior size 14X32. Roof is metal with R30 insulation, walls inside are solid pine planking with R19 insulation. There is a loft above the porch, with a mattress, but I don't see my old body crawling up there. Outside is a fire pit and several chairs, the porch overlooks one of the creeks and as I sat with my morning coffee, 5 deer ambled there way down the creek bed. I've also seen turkey, pheasant, squirles, while cutting firewood and stacking it.
The previous owner got transferred with his job and wanted a quick sale, so a cash offer did the trick. The only thing he took were a few 'nick knacks' and pictures. Left virtually everything.

Congratulations on finding a set-up that's ready to enjoy. I am in the next county over, Pike County. I am facing a whole summer of labor to get a cabin out there and I will be lucky if it's half as beautiful. Enjoy it.

Mighty fine cabin you've got there, and the property is reaal clean! Love how the Amish live, lots to learn from them. Wish my cabin was large enough for a nice little wood burning stove (8ft by 16)oh well : (
