I suppose both have their pros and cons. Together, you have it all covered. Voltage can point to a bad cell as battery is at rest and surface charge gone, hydrometer will tell you which cell. But a bad battery is a bad battery, which bad cell is irrelevant, it needs to be replaced regardless of "which cell is bad". I think a battery at rest, surface voltage gone, voltmeter is good. But during charging, voltage may not be the most accurate for spotting potential trouble ahead. A hydrometer may be. Keep them both on hand.
