I'm considering buying a used Jotul GF 600 DV propane stove on CG for $500... is there anything I should know about the brand, model, or maintaining a Jotul propane stove?? This is our first. Any advice appreciated!

Jotul makes great wood stoves (I've had 2 of them). I'm sure the cast iron plates and construction of that stove would be top notch. I don't know anything about their gas stoves, so can't offer much concerning that one. You might try looking through the gas forum history over at hearth.com or asking your questions there too. Likely a few owners of that stove there.

Just be sure the stove is in fact suitable for the gas you have; propane or natural gas, or convertible one to the other.

Not familiar with this model.
If you are off grid, avoid glow-bar type ovens. Will need a lot of electric to run oven...
My Premier propane range uses batteries for ignition, last for years! I’m still on original cells.

Some, like our Osburn, have a pilot light. The pilot heats a thermopile that generates its own electricity to run the thermostat. Even during weeklong power failures of recent years, we had heat.
