We get some mold in our cabin and someone recommended leaving the windows open. Anyone do this? I’m thinking of leaving them cracked 3-4 inches with screens, but I worry about critters smelling something and wanting to chew/claw their way in.

Do you have any food left out? If not you might be ok. If they can't smell anything tasty, chances are they'll leave it alone.
You could also cut wood strips to block the window from opening any further than you leave it, and would keep larger animals out (but not mice, lol). Just cut a strip of wood down to fit in the space from the bottom sash to the top of the window opening (once you've cracked the window open), and one to fit the space from the bottom sash to the sill, and you'll effectively "lock" the window in position.

I always leave one window cracked open on my porch to make sure no water comes in. It is cracked open all year for ventilation. So far no critters even attempted to get in. I do have some food left there bit it is all canned or in jars or sealed in bags. I have cameras set up and have a bear on occasion walk by. All the do is clean up my bbq lol. I do worry about break ins but if anyone wants to get in they will anyway the glass wont stop them but that is why I have numerous cameras set up. I did have some mold, very minor but now nothing at all. You can purchase DAMP RID from Amazon or any household store. They work pretty good too.

If you don’t want to leave windows open put in some vents. But either way airflow is the key
