I cannot get concrete truck down my minimum maintenance road to pour slab. Is there any way to build foundation for small hunting/fishing cabin without pouring large slab?

We have the same access issues. All materials must go in via pickup truck. We are going to use post/beam/pier for our three cabins on 80 acres.

Boats-
I built on pressure treated timbers lagged into a compacted crushed stone base. I then put in a stone floor with large slabs of sandstone and set motar between them. It came together just fine.
