I thought it would look nice to get some 2 inch wide straight timber and debark it.. cut them in quarters and use that for corner molding in the ceiling.. but I couldnt just cut them, debark them and put them up could I ??

Do I need to let these sit for year or is there a faster way to make them safe to use against my pine ceiling and drywall walls ?

Fresh cut timbers are going to shrink, so if you install them immediately they will end up with gaps. Once you have your material ready you could have it dryed in a kiln, that would take care of the issue.
