If you REALLY wanted to be anal like I'm being, buy a moisture meter and see if the framing lumber is getting dryer or wetter over time. But at least you can see if it's below critical #s before you drywall.. But if it gets "too wet," once it warms a bit you'd see mold growth, etc.
