A couple of pumps I'm looking at both say 1/2" FNPT or 3/4" quick attach inlet/outlet sizes. I'm trying to figure out what nominal size pex that corresponds to (the manuals didn't help). The pumps are Remco Fatboy 7.0 gpm and Delavan 7.0 gpm.

I'm not sure what a quick attach is but with 7gpm I would be useing 3/4in pex at least for your main run. They should have s 1/2mnpt to 3/4 pex.

Turns out it's a snap-in, snap-out method with seals provided by o-rings. It makes it easy to install and remove the pumps and/or segments of pipe from the system, vs. screwing, crimping, clamping, sawing, etc.
