Wondering if the reason is because there is a chemical reaction between the rv antifreeze and the Styrofoam in the tanks? I have heard it's sometimes the water (though I have been winterizing the same way for years) and it's only in the last couple years since we installed new toilets with Styrofoam inserts.

The foam is used to minimize sweating on the exterior of the tank during hot humid summer days, especially if you have very cold water. The tank came from the factory that way. You can remove the foam and it will not hurt anything

I doubt that just water would do that..... Where is the flush water coming from?
